Khachapuri in AdjarianIngredients:milk — 125 ml
drinking water — 125 ml
dry yeast — 7 g
salt — 1 teaspoon
sugar — 2 teaspoons
vegetable oil — 1-2 tablespoons
egg — 1 pc.
flour — about 400 g (see by consistency)
suluguni cheese — 250 g
Adyghe cheese or feta — 250 g
butter — 100 g
eggs — 4-5 pieces.
Preparation:Mix milk with water, warm it up to a warm state. Add sugar, yeast and stir thoroughly. Leave it on for 10 minutes.
Next, pour in the vegetable oil, throw in the salt, add the egg. Mix the ingredients. Gradually add the sifted flour, start kneading. The dough should be elastic, soft and tender.
As soon as the dough stops sticking to the palms, place it in a large clean bowl, cover with a towel and put it in the heat for 1 hour. After the specified time, knead the increased mass and leave it in the heat for another 30 minutes.
In parallel, prepare the filling. In the original, low-salted Imeretian cheese is used for khachapuri in Adjarian, but since it is impossible to find it on sale, you can use a substitute in the form of a mixture of suluguni and Adyghe cheese (a mixture of suluguni and feta is also suitable). Grate the cheeses with coarse shavings. For juiciness, add melted butter, mix, salt to taste.
Divide the dough into 4-5 equal parts (depending on the desired size of the khachapuri). Roll out large thin ovals.
From the upper and lower edges, lay out small sides of the cheese mass.
Roll the parallel sides into tubes and bring them to the center. The cheese filling should be inside the formed rollers.
Fasten the edges, giving the workpiece the shape of a boat. Pinch the dough very carefully so that the sides do not turn around during baking.
Spread the folded edges with your fingers, fill the formed "boat" with cheese "minced meat".
Transfer the khachapuri to a baking sheet with parchment. If desired, the sides can be smeared with beaten egg or yolk, shaken with a spoonful of water.
Bake khachapuri in Ajarian style in an oven heated to 200 degrees for about 15-25 minutes.
Then remove the almost ready khachapuri, lightly tear the cheese filling with a spoon and pour a raw egg into each "boat".
Put the pies in the oven for 2-4 minutes (the protein should "grab" slightly, and the yolk should remain liquid).
Grease the sides of the finished khachapuri with butter, and also throw a small piece of butter into the filling. Serve khachapuri in Adjarian style hot or very warm.
Not the easiest recipe, which is perfect for making with friends on the weekend :)Fun and delicious!
