(Egyptian national dish)
Ingredients:
garden beans (fava) — 250 g
onion — 1 pc.
shallots — 2 pcs.
dill — 1/2 bunch
parsley — 1 bunch
cilantro — 1 bunch
garlic — 6 cloves
baking soda — 1 teaspoon
salt — 2 teaspoons
ground cumin — 2 tablespoons
ground coriander — 1 teaspoon
cayenne pepper — 1/4 teaspoon (optional)
sesame seeds — 3 tablespoons
flour — 1 tablespoon;
vegetable oil — for frying.
Preparation:
Soak the garden beans overnight (or at least for 8 hours) in a large bowl with water.
The next day, drain the water and grind the beans in a food processor until smooth. Transfer to a large bowl.
In a blender, chop the onion, garlic, parsley, coriander, dill and shallots to a paste consistency. Add this paste to the bean paste and mix.
Add cumin, coriander, cayenne pepper, salt, flour and mix well.
If the dough is too soft, add more flour, one teaspoon at a time, until it becomes thick enough to form balls.
Add baking soda just before frying. Mix well.
Heat a large frying pan with vegetable oil.
Form small balls the size of a ping pong ball, flatten them slightly on both sides and roll in sesame seeds.
Carefully place the balls in the hot oil, leaving a space between them. Fry until one side is golden brown, about 4-5 minutes. Then turn over and fry on the other side for another 1-2 minutes.
Remove and place on a paper towel. Taamiya should be crispy on the outside and soft on the inside.
Serve hot or warm in a plate or in a pit with various salads and additives.
This recipe is quite unusual, but very interesting and suitable for connoisseurs of Arabic culture and cuisine.
Enjoy your meal!
