Cannoli
(traditional sweet of the inhabitants of the island of Sicily)

Ingredients:

For the test:
250 g flour
1 egg
2 tbsp sugar
2 tbsp butter
1 tbsp cocoa powder (optional, for color)
60 ml of dry white wine
1 tsp ground cinnamon
1 tsp vanilla extract
a pinch of salt
vegetable oil for frying
For the filling:
500 g of ricotta
100 g powdered sugar
100 g finely chopped dark chocolate or chocolate chips
1 tsp vanilla extract
peel of one orange (optional)
a pinch of cinnamon (optional)
For decoration:
powdered sugar
chopped pistachios
candied fruits

Preparation:

In a large bowl, combine flour, sugar, cocoa powder (if used), cinnamon and a pinch of salt. Add the egg, butter and vanilla extract.
Gradually pour in the wine, kneading the dough until smooth.

Knead the dough on a floured surface until smooth, about 10 minutes. Wrap in plastic wrap and leave for 30 minutes.

Divide the dough into several parts. Roll out each piece very thinly on a floured surface.

Cut out circles with a diameter of about 10 cm from the dough. Wrap each circle around a metal cannoli tube, connecting the edges with a drop of water.

Heat the vegetable oil in a large saucepan to 180 °C. Fry each tube until golden brown, about 2-3 minutes.

Carefully remove the finished tubes from the metal molds and leave to cool on paper towels.

In a bowl, mix the ricotta, powdered sugar, vanilla extract, chocolate chips and orange zest (if used). Add a pinch of cinnamon. Put the filling in the refrigerator for 30 minutes to make it denser.

Fill the pastry bag with the filling and carefully fill the cooled tubes.
Sprinkle the ends of the cannoli with chopped pistachios and candied fruits.

Sprinkle the cannoli with powdered sugar before serving. They should be served immediately after filling, so that the tubes remain crispy.
You can experiment with the filling by adding lemon zest, chocolate chips or nuts.

Your cookbook.

Churasco
(all Brazilians do this)

Ingredients:
1 kg of meat (beef, pork or chicken, it is best to use parts such as steak or ribs)
4-5 cloves of garlic
1 tablespoon olive oil
1 tablespoon salt
and black pepper to taste
1 teaspoon paprika (optional)
lemon for serving
fresh herbs (parsley or coriander) for decoration.

Preparation:
Meat preparation. The meat should be fresh and of high quality, cut it into large pieces.

Pickling. In a deep bowl, mix olive oil, finely chopped garlic, salt, black pepper and paprika (if using). Carefully rub the meat on both sides with the resulting mixture. Leave it to marinate for 30 minutes at room temperature or for several hours in the refrigerator for a richer flavor.

Grilling. Preheat the grill or grill to medium heat. If you use coals, let them burn to white ash. Place the meat on the grill and cook it, turning it over every 5-7 minutes, until the desired degree of roasting. The cooking time depends on the thickness of the pieces of meat and the preferred degree of readiness (usually from 15 to 30 minutes).

Supply. When the churasco is ready, remove it from the grill and allow to cool slightly. Cut the meat into portions and serve with lemon slices and fresh herbs. Churasco goes well with various side dishes such as potatoes, grilled vegetables or salad.

Bungeopang (Punoppan)
(dessert from South Korea)

Ingredients:

80 g flour
40 g of sweet rice flour
1/2 tsp baking soda
1/2 tsp baking powder
1 egg
1/2 cup milk
1 tbsp sugar
a pinch of salt
oil for lubrication
80 g (4 tbsp) sweet red bean paste or sweet red beans

Preparation:

Mix the dry ingredients.
In a separate bowl, beat the egg, and then mix with the milk and dry ingredients until a batter is formed. If the dough is thick, add a little milk.

Heat a frying pan on the stove. If the mold is not hot enough, the dough may stick.

Turn down the heat to a minimum. Lubricate with oil, the oil should bubble, which means that you can add the dough.

Pour the batter into one side of the mold (the side that is overheated) — about 2/3 of the fish — without covering the tail.
Spoon out the bean mixture.

Add a little more dough to completely cover the red bean paste and fill the mold.

Close the top lid and turn it over immediately.
Increase the heat to medium. Cook for about 2 minutes on each side.

Open it and check its readiness. If necessary, fry for another 30 seconds.
Other fillings can also be used to make bungeopang, such as jam, canned fruit, custard, and chocolate.

It's better to make it yourself than to buy it :)

Corn chowder soup with fried bacon and corn
(from America)

Ingredients:
bacon — 100 g
potatoes — 4 pcs.
onion — 1 pc.
meat broth (or water) — 500 ml
canned corn — 1 can
of cream (10% fat content) — 500 ml
hard cheese (Russian or similar) — 100 g
salt — to taste
black pepper (ground) — to taste

Preparation:
Wash, peel and cut the potatoes into small cubes. Finely chop the onion. Grate the cheese on a fine grater.

It is better to take the bacon in a whole piece, then cut into small cubes.
Transfer the sliced bacon to a saucepan and fry over medium heat until crisp. Transfer half of the fried bacon to a plate and set aside.

Add the onion to the bacon in the pan and cook, stirring, for about 5 minutes or until the onion is tender,
followed by the chopped potatoes. Cook, stirring, for 1-2 minutes.

Pour the canned corn into a bowl and grind it to a puree (you can add it together with the liquid).

Pour the broth or water into a saucepan and add the corn puree. Stir, season with salt and bring to a boil.
As soon as the broth boils, reduce the heat, cover the pan with a lid and cook, stirring, over low heat for 15-20 minutes or until the potatoes are cooked and slightly boiled.

Heat the cream separately in a saucepan, but do not boil. Pour the cream into the soup, remove from heat and stir.
Pour the grated cheese into a saucepan, return to a low heat and warm up so that the cheese melts.

Pour the finished soup onto plates, sprinkle with freshly ground black pepper and the remaining fried bacon.

Recipes for every taste.
