(traditional sweet of the inhabitants of the island of Sicily)
Ingredients:
For the test:
250 g flour
1 egg
2 tbsp sugar
2 tbsp butter
1 tbsp cocoa powder (optional, for color)
60 ml of dry white wine
1 tsp ground cinnamon
1 tsp vanilla extract
a pinch of salt
vegetable oil for frying
For the filling:
500 g of ricotta
100 g powdered sugar
100 g finely chopped dark chocolate or chocolate chips
1 tsp vanilla extract
peel of one orange (optional)
a pinch of cinnamon (optional)
For decoration:
powdered sugar
chopped pistachios
candied fruits
Preparation:
In a large bowl, combine flour, sugar, cocoa powder (if used), cinnamon and a pinch of salt. Add the egg, butter and vanilla extract.
Gradually pour in the wine, kneading the dough until smooth.
Knead the dough on a floured surface until smooth, about 10 minutes. Wrap in plastic wrap and leave for 30 minutes.
Divide the dough into several parts. Roll out each piece very thinly on a floured surface.
Cut out circles with a diameter of about 10 cm from the dough. Wrap each circle around a metal cannoli tube, connecting the edges with a drop of water.
Heat the vegetable oil in a large saucepan to 180 °C. Fry each tube until golden brown, about 2-3 minutes.
Carefully remove the finished tubes from the metal molds and leave to cool on paper towels.
In a bowl, mix the ricotta, powdered sugar, vanilla extract, chocolate chips and orange zest (if used). Add a pinch of cinnamon. Put the filling in the refrigerator for 30 minutes to make it denser.
Fill the pastry bag with the filling and carefully fill the cooled tubes.
Sprinkle the ends of the cannoli with chopped pistachios and candied fruits.
Sprinkle the cannoli with powdered sugar before serving. They should be served immediately after filling, so that the tubes remain crispy.
You can experiment with the filling by adding lemon zest, chocolate chips or nuts.
