Let’s start this working week with another note on the evolution of espresso. As mentioned here, the 1900-1920s were a time when espresso as we know it had not yet been born; the taste of coffee was so bitter that one Italian inventor found it similar to “walking into a foggy Milan”. His name was Achille Gaggia and he was the owner of a coffee bar in Milan’s Viale Premuda. In 1930, striving to get rid of the bitterness and burnt taste, Gaggia began looking for ways to improve the quality of espresso. He met Antonio Cremonese, an engineer and another coffee aficionado, and their partnership gave birth to a new system. Designed in 1936, this device put an end to the use of steam and placed baristas into the driver’s seat, enabling them to control the entire process of extraction.
1938 saw Gaggia file an application to patent his invention he dubbed Lampo, which would be displayed at Milan Consumer Goods Trade Show the next year. This was a game-changing moment for the world of coffee. Also, it was the moment “crema caffè naturale" (or natural coffee cream) was born…
