As we’ve postulated in our previous chapter on the evolution of coffee machines in the 20th century, the history of modern espresso machines is inseparable from a Hungarian-born inventor by the name of Francesco Illy. Born as Ferenc Illy in Temesvár (now known as Timisoara) to János Illy, a Hungarian carpenter, and German-born Aloisia Rössler, Ferenc graduated from a school in his hometown, which was then part of the Austro-Hungarian Empire, and moved to Vienna where he was drafted into the army and served in WWI as an officer participating in several major battles and earning himself multiple medals for his heroism. When the war ended, Ferenc found himself in Trieste where he would soon marry and settle down employed by Hausbrandt, a big name in the world of coffee. In 1933, Ferenc, having already changed his name to Francesco, founded his own company called llycaffè and produced his first invention, a new method of packing roasted beans that used airtight containers and high-pressure nitrogen to preserve the flavors and that has since become an industry standard.
In 1935, Illy presented another invention that became a precursor of modern espresso machines, the Illetta, world’s first automatic machine that employed steam and compressed air for pressure and ensured water temperatures of around 90 degrees. Combined, these innovations helped prevent coffee from burning.
P.S. Just one year ago, Illy released a brand-new version of the Illetta designed by Antonio Citterio, a famous Italian architect we have been meaning to post a note about.
