Eintopf
(German soup served on the New Year's table)
Ingredients:
green or brown lentils — 300 g
chicken or beef broth — 1/2–2 liters
celery — 2 stalks
potatoes — 3-4 pieces
carrots — 2-3 pieces
salt — ¾ teaspoon
ground black pepper — ½ teaspoon
thyme — 1-2 sprigs
vegetable oil — 1 teaspoon
smoked sausages or sausage — 250-300 g
onion — 2 pieces
water — 2-3 tablespoons
liquid honey — 1 tablespoon
red wine vinegar — 3 tablespoons
herbs — to taste
Preparation:
Wash the lentils and soak for 3-4 hours or longer. Rinse again, pour in the broth, bring to a boil and cook over low heat for about 15-20 minutes.
Cut the celery into small pieces, and the potatoes into cubes with sides of about 1 cm. Chop or coarsely grate the carrots.
Add the vegetables to the lentils along with salt, pepper and thyme sprigs. Simmer for another 10-15 minutes. If necessary, add a little more broth so that the eintopf does not get too thick.
Cut the sausages into circles or small pieces. Brown them in a frying pan with oil for a few minutes.
Put it on a plate.
Chop the onion into rings or halves of rings. Put it in the same pan in which the sausages were cooked. Fry for a few minutes. Then pour in the water and cook until it has completely evaporated.
Remove the thyme sprigs from the soup, add honey and vinegar and stir gently.
Add the onion and sausage to the same pan, mix again, sprinkle with herbs and serve immediately.
