How do you decide when a self-hosted app needs a separate data service?

I am working on Spedo, a preview single-node RESP runtime for hot, rebuildable KV/JSON data. It is not a cluster or a replacement for a system of record.

For a small self-hosted app, what makes you add a separate cache process instead of keeping rebuildable state in the app? I am interested in the operational trade-offs and the point where the extra service earns its keep.
