What do you guys use to group documents in Paperless-NGX?

Sometimes I feel the need to group together a bunch of documents in PNGX but there doesn't seem to be any good way to do it.

Yes, this is different from tags, correspondents or document types, which I already use for other purposes.

How I'd like it to work: I would be browsing documents and see one or several that should be in the same group together. Call it group, topic, category, whatever. I'd like to be able to select them, choose the group from a dropdown, and assign them to it. Or, very important, if the group doesn't already exist I'd like to be able to create it right there from the document view.

I've tried custom fields, you make a text type called "Group" and you give them the same value. It's good that you can filter for it and add it from document view. It's bad that there's never any listing or autocomplete for custom field values so you never know what the values are, just have to remember them I guess. Also you can't create them from document view.

I've tried a special type of custom field, the "doc link". It's interesting but not quite what I need. It lets you create reciprocal links between two documents from the doc edit screen, if you search by another doc by name. Not really what I'm after, and not sure how I would even filter or see these links – you gotta pretty much go to a document and then you find out it's linked.

I've also tried sub-tags. These are listed in the dropdown in document view so you can assign them but, again, can't create them on the fly from document view. Also, I'd like grouping to be able to cross any other categorization criteria, so for example to be able to group together docs under different tags, and you can't do that with sub-tags because they're tied to their parent.

The closest I've come is to use correspondents for this. I know it's not what they're meant for but I don't use them much right now. They can't be created on the fly from document view either.

TLDR: Ideally there should be a new metadata, and it should let you create them from document view.

Am I missing anything?
