Is Vanilla Wireguard Better than TailScale?

I've been considering switching to plain Wireguard (or at least an easier setup with wg-easy). Considering that TailScale is linked to my Google account (which can be detrimental for privacy concerns, and if I delete that account, it'll affect my homelab).
Could I set up another server for Wireguard and route everything there instead? Would it be better in terms of privacy and speed?
