Mumbai is turning Independence Day into a citywide food celebration, with everything from pay-as-you-wish banana-leaf feasts to lavish hotel brunches. The Bombay Canteen is bringing back its community Daawat, with proceeds supporting Make Mumbai Green Again, while Via Bombay, JW Café and Sesame are serving spreads built around regional Indian favourites alongside international dishes. Seoul Dak is taking a different route, inviting diners to reinvent an Indian dish with Korean street-food flavours, with the winning creation set to appear on its menu for a month.
