Kalzha
(this is very popular in Tatarstan)
Ingredients:
beef (peritoneum) — 250 g
hot water or beef broth — 200 ml
garlic — 3 cloves
adjika — 50 g
parsley — 1 bunch
dill — 1 bunch
salt, pepper —
green onion to taste
Preparation:
Wash the beef under running water, peel off the films and excess fat, and dry with paper towels.
Beat to a thickness of 1.5–2 cm, add salt and pepper to taste.
Peel and chop the garlic. Carefully rub the meat with garlic, then grease with adjika on both sides.
Set aside the beef for 20 minutes to allow the meat to marinate and soak in the garlic flavor.
Chop the dill, parsley and green onion. Put the greens on the meat. Leave a small amount of greens to serve.
Carefully roll the beef layer into a roll. Tie the roll with a cooking thread so that it retains its shape during cooking.
Place the roll in a preheated frying pan with a small amount of vegetable oil. Fry until golden brown.
Pour hot water or beef broth into the pan, cover with a lid. Simmer the roll on low heat for 20-25 minutes.
Serve the dish with adjika and fresh herbs.
Kalzha can be served both hot and cold.
