Turtier
(Canadian meat pie)
Ingredients:
unsalted sweet butter 82.5% — 220 g
whole grain flour — 450 g
minced meat — 700 g
chicken broth — 200 ml
sliced bacon — 100 g
egg yolk — 3 pcs.
potatoes — 2 pcs.
onion — 2 pcs.
garlic — 3 cloves
water — 50 ml
Preparation:
Mix flour, salt and sweet butter. Add 2 egg yolks and half a cup of water. Knead the dough, form a ball and refrigerate for a couple of hours.
Fry finely chopped bacon and onion in a frying pan, add minced meat and chopped garlic to them. Roast for another 5 minutes.
Coarsely grate the potatoes and send them to the meat. Pour the broth into the same place, add salt and spices to taste.
Simmer over medium heat for half an hour, until the liquid has evaporated, and allow the filling to cool.
Divide the dough into two unequal parts — larger and smaller. Roll out and place the first circle on a greased baking dish so that the dough extends beyond the edges of the mold. Put the meat filling on top.
In the center of the second circle, cut out a small window for steam to escape and cover the filling.
Pinch the edges, grease the turtiere with the remaining yolk and place in the oven, preheated to 230 degrees.
Bake for 20 minutes, then turn down the temperature to 180 degrees and bake for another 20 minutes.
Allow the turtiere to cool slightly and serve.
