▫️1 Avocado, large
▫️2 Fuyu persimmons
▫️1 Garlic
▫️1/2 Lemon, zest of
▫️1 Lemon, juice of
▫️1/2 Navel orange, juice of large
▫️1/2 Orange, zest of
▫️1 tsp Dijon mustard
▫️1/3 cup Quinoa
▫️1 Salt and pepper
▫️2 tsp Champagne vinegar
▫️1/4 cup Olive oil
▫️1 Top with pine nuts and shaved parmesan
