Easter Finnish pudding "Mummy" Ingredients:rye flour — 100 g
salt — 1/4 teaspoon
sugar — 2-3 tablespoons
water — 350 ml
malt — 50 g
orange peel — 1/2 tablespoon
Preparation:Heat 150 ml of water to 60 degrees, add 25 g of malt and 50 g of rye flour. Stir.
Sprinkle malt and rye flour on top, cover with foil, then put away in a warm place for 1.5–2 hours.
After 2 hours, add another 200 ml of hot water, 25 g of malt and 50 g of rye flour. Stir everything again. Sprinkle with malt and rye flour, leave for another 2 hours.
Transfer the fermented mass to a saucepan, add sugar and salt to taste. Cook over medium heat for 10 minutes, stirring constantly.
Remove from heat, cool, then transfer the mass to a baking dish. Sprinkle sugar on top, bake in the oven for 2 hours at 150 degrees.
Then put the "Mummy" in the refrigerator for 1-2 days to make the pudding thicker.
You can serve Mummy with fresh berries, a scoop of ice cream, whipped cream or yogurt.
