Korean sweet cookies "Yakkva"
Ingredients for the dough:
wheat flour — 140 g
sesame oil — 20 ml
vegetable oil for frying — 200 ml
Syrup for dough:
honey — 30 g
sake — 20 ml
water — 20 ml
Honey syrup:
rice syrup — 50 ml
water — 40 ml
honey — 115 g
ground ginger — 1 tsp
Decoration: pine nuts, white sesame seeds
Preparation:
In a bowl, mix the wheat flour and sesame oil. You should get a crumbly but moist mass with lumps.
In a separate container, prepare the syrup for the dough: combine honey, water and sake (can be replaced with rice wine) and send it to a bowl to the dough.
Knead the dough, wrap it in plastic wrap and put it away for half an hour.
In a separate container, mix honey, water, rice syrup and ground ginger.
Roll out the dough 1 cm thick. Cut each rectangle into several small squares, and make a hole through the center of each one.
Heat the vegetable oil in a deep frying pan and dip the dough squares in it for 4 minutes until they pop up. When the cookies are on the surface, keep them in the oil for another couple of minutes until golden brown.
Place the squares on a paper towel and drain the remaining butter.
Bring the syrup to a boil in a saucepan, remove it from the heat and toss the cookies. The syrup should completely cover each piece of dough. Leave it on for 2-3 hours.
Take out the cookies and decorate them with sesame seeds or nuts.
