Pau de cayju
(Brazilian breakfast)
These are cheese buns with a crispy crust and a soft, stretching middle.
Ingredients:
cassava flour (or tapioca flour) — 250 g
milk — 200 ml
vegetable oil — 100 ml
salt — to taste
eggs — 2 pcs
grated cheese (it is best to use semi-hard varieties, such as parmesan or Minas queijo) — 150 g
Preparation:
In a saucepan, mix the milk, vegetable oil and salt, bring the mixture to a boil.
Pour the cassava flour into a bowl, pour in the hot milk mixture, stirring well until smooth.
Let the dough cool slightly, then add the eggs and cheese, mix well.
Form small balls of dough and place them on a baking sheet lined with parchment.
Bake in a preheated 180 °C oven for 20-25 minutes, until the buns turn golden.
In Brazil, pau de cayja is often served with tea or coffee.
This dish is a traditional breakfast and we recommend that you try it for sure! (if you find such flour, of course)
