Twice Baked Potatoes Recipe

Ingredients:

4 large potatoes scrubbed
100 gr shredded cheese
50 gr sour cream
50 ml buttermilk
4 tbsp butter room temperature
3 scallions sliced
4 strips bacon cut, cooked crisp
salt
ground black pepper

Instructions:

Preheat oven to 200°C.

Brush potato with oil and sprinkle with salt and pepper. Bake on the rack until fork tender (45 min - 1 hour).
Cool for 10 minutes.

Cut the potatoes in half crosswise. Leave a 5 mm thickness of flesh in each shell, and scoop out the potato flesh into a bowl.

Transfer the potato shells to the foil-lined baking sheet and cook for 10 minutes (so they hold shape).

Mash together half the cheese, sour cream, buttermilk, half the butter, half the scallions, and half the bacon with the baked potato flesh until smooth. Add salt and pepper.

Fill the potato shells with the mashed potato mixture and top with remaining cheese, scallions, bacon lardons, and butter.

Broil until the cheese has melted, 5-10 minutes.
