Mishaal Rahman (via 🔗 Android Authority) shared that the Pixel Watch will soon get customizable app list view. Under Settings / General at the very bottom there will be a new item "App View". Clicking on it you will see two options: List view and Grid view.
The first option is already familiar to you, while the second option removes the application names, leaving only their icon, while the apps themselves arranged in 3 columns. The app list itself will also have the option to switch between Grid and List at the very bottom.
The good news is that you can enable this now with the ADB command. For the first gen Pixel watch, you'll have to set up debugging over Wi-Fi, while for the second gen, you just have to connect the watch via charger to your PC and enable debugging.
ADB command (shared by AA on Mastadon) :
adb shell settings put global wear_launcher_ui_mode 1
The effect persists until you reboot.
