🇦🇹 Kaiserschmarrn is perhaps Austria’s most popular dessert — and rightly so!
🤩Kaiserschmarrn is a lightly sweetened shredded pancake that often contains raisins and is served with applesauce, berry compote, or jam.
🔜The name comes from the German words “Kaiser” (emperor) and “Schmarrn” (colloquial — “disorder,” “nonsense”). However, historians suggest that “Kaiser” may derive from the Austrian “Kaser” (“shepherd”) or “Casa” (“house”).
⭐Ingredients:
🟠Eggs — 4 pcs
🟠Milk — 250 ml
🟠Flour — 120 g
🟠Sugar — 50 g
🟠Vanilla sugar — 1 packet (or 🟠1 tsp vanilla extract)
🟠Salt — 1 pinch
🟠Butter — 20 g
🟠Raisins — 30 g
🟠Rum (optional) — 50 ml
🟠Powdered sugar — for serving
1️⃣If using rum, pour it over the raisins and leave them for 30 minutes — this will make them more aromatic. Without rum, simply rinse the raisins with warm water.
2️⃣Separate the whites from the yolks. Whip the whites with half the sugar until stiff peaks form. Mix the yolks with the remaining sugar, sifted flour, vanilla sugar, and a pinch of salt until you get a coarse crumbly mixture.
💕Gradually whisk the yolks into warm milk, stirring constantly to avoid lumps. Then add flour and mix until smooth. Gently fold the whipped egg whites into the batter using a spatula in a “top‑to‑bottom” motion to preserve their airiness.
4️⃣Melt 20 g of butter in a frying pan. Pour in the batter, spread it out, and sprinkle with raisins. It’s important that the batter layer doesn’t exceed 2 cm, otherwise the kaiserschmarrn may not cook through.
5️⃣Fry over medium heat until a golden crust forms. Using a spatula, cut the pancake into 4 pieces, carefully flip each piece, and return it to the frying pan.
6️⃣Cook for another 3–5 minutes. Remove the pan from oven, tear each section into pieces approximately 2–3 cm in length, sprinkle with a tablespoon of sugar, and return to the oven for another 5 minutes so that the sugar caramelizes and forms a crispy crust.
7️⃣Transfer the finished dessert to a plate and sprinkle with powdered sugar.
